There are many vegetables that make your mouth water on seeing it. Potato is also one of these vegetables. Everyone makes Dum Aloo in their own style. The special thing is that due to making it in different styles, the taste of everything also becomes excellent. But there is a common mistake which most of the people make while making Dum Aloo. They feel that if they put this thing in Dum Aloo ki sabzi, then the taste will be great, although the whole taste of tomato aloo sabzi comes from it. Ingredients needed to make Dum Aloo
- small sized potatoes
- onion chopped
- garlic cloves
- Green chilli
- coriander powder
- red chili powder or kashmiri red chili powder
- turmeric powder
- mustard oil
Method of making masala
Take onions according to the number of people for whom the vegetable is to be made. If you are making a vegetable for two people, peel two onions. After that grind them and wash them with water. Now peel at least 5 to 6 cloves of garlic and wash them with water. Take 1-2 green chilies and wash them with water. Now put all these things in a mixer jar. After this add little water and close the lid of the mixer jar. Now turn on the mixer and grind the spices. As soon as the masala is ground, take it out in a bowl. Now in this bowl, add two spoons of coriander powder, half a teaspoon of turmeric powder, half a teaspoon of Kashmiri red chili, less than half a teaspoon of garam masala. If you find the water a little less, add more. Mix this paste well.
Here you have to keep one thing in mind that do not put tomatoes in Dum Aloo sabzi at all. Tomato is neither cut nor pureed. Many people add tomatoes, due to which the taste of Dum Aloo starts to resemble tomato potato vegetable.
Method of making Dum Aloo
If you are making vegetable for two people, then take at least 5 potatoes. Peel these potatoes. After this, hit the potato with a knife. This will make marks in the potato. Now wash them with water and fill a bowl with water and put those potatoes in it. Now put the cooker on the gas on low flame. Add about 2 teaspoons of oil to it. When the oil is hot, remove the potatoes from the water and put them in the oil. Fry the potatoes for about 2 minutes. When the potatoes turn light brown, take them out in a plate. Now put the masala you have made in the oil and mix it with a spatula. Now cover the cooker with a lid. It will take about 15 minutes for the spices to cook. Remove the lid of the cooker from time to time and stir the spices. This will prevent the spices from getting down. When the masala leaves the oil, put all the potatoes in it. Now stir with a spatula and fry for about 1 minute. Now you have to put water in it.
Add as much water as you want to keep in Dum Aloo. After this add salt as per taste and close the lid of the cooker. Turn up the flame. Switch off the gas after 4 to 5 whistles. When the whistle goes out, take out the vegetable in a bowl and put coriander leaves on top. Your Dum Aloo is ready to eat.
