Ingrediants
- 1 cup moong dal
- 1 large bowl fresh spinach
- Salt to taste
- 2-3 tbsp of oil
- 1 finely chopped tomato
- 7-8 garlic cloves, finely chopped
- 1/4 teaspoon mustard seeds
- 1/4 teaspoon cumin seeds
- 1/4 teaspoon asafoetida
- 1/4 teaspoon turmeric powder
- 1 teaspoon coriander-cumin powder
- 1 teaspoon of chili powder
- 1 glass of water
- 1/2 tsp garam masala
Put jaggery, salt and a cup of water in a pressure cooker and cook till two whistles.
While this is cooking, wash and finely chop the spinach leaves.
Heat oil in a pan and add mustard seeds, cumin seeds, asafoetida, chopped tomato and finely chopped garlic. Fry until fragrant.
Add chopped spinach and a pinch of salt to the pan. Cook for about 10 minutes, allowing the spinach to wilt.
When the moong dal is cooked, mash it lightly and mix it into the spinach mixture. Add remaining water and mix all the spices. Mix well.
Cook for a few more minutes until everything is well mixed.
